Fried Chicken with Fish Sauce

i didnt reinvent the wheel for sure every vietnamese kid has probably tasted this at some point in their life – anyways, i was trying to clean out the fridge during move-out and made this on a whim. my boyfriend liked it so much so we ended up eating it every day for the past month now LOL

skin-on chicken leg quarters, we usually get it from our butcher and the i debone it myself. i use the residual bones to make bone broth later in the week after i gather enough in the freezer 😀 nothing wasted

then we pair it with garlic chips cooked in the residual chicken fat with a bit of butter. if we have time we crisp up some mushroom to go along with everything hehehehehehe, but sometimes i get lazy
